Peruvian dishes like ‘lomo saltado’ (beef stir-fry), ‘arroz con pato’ (duck and rice) or ‘ají de gallina’ (spicy ají pepper creamed chicken) are always delicious, but Peruvian food is much more than just these three options. Provinciano travels through our country’s regions and, through their proudly Peruvian chef, brings their most flavorful dishes to the capital.

History: Jimmy Rosales started out as a dishwasher in a renowned Miraflores restaurant. He soon became Gaston Acurio’s right hand thanks to his talent, and was put in charge of training the chefs of Acurio’s establishments all over the world as well as leading many designer restaurants. Now, Jimmy pours his heart, essence and experience into Provinciano, the first Peruvian creole food bar in a gastronomic market.

Chef’s recommendation: Chiclayo Style ‘Cabrito a la Norteña’ (baby goat and corn beer stew).

Hours: Monday through Sunday from 11:00 a.m. to 10:00 p.m.
