A greeting, and insult or a nickname: “huevón” can be used as any of those and more. However, this time, it has a new meaning: breakfast at any time of the day. Huevón’s concept goes against time restrictions, fancy cooking and the conventional, but above all, it’s made up by many different types of egg options: scrambled, poached, grilled, beaten and well laid.
History: Mercado Nº 28 partners Michael Moldauer and Michel Seiner join Palmiro Ocampo, a young and extremely talented chef who has worked in kitchens such as Noma and El Celler de Can Roca. Together, they are breaking the mold with their hearty artisanal breakfasts, which are available until the late night hours.
Chef’s Recommendation: "Huevón" – organic scrambled eggs, Cajamarca cheese, ´cecina´(smoked pork jerky), sliced avocado and special ´Huevón´ sauce in a warm brioche bun.
